You don’t even need to go to flesh. Cum is a much more common example. IMO, it’s vegan if its consentual in the practical sense, but technically not by a meaningless strict definition sense.
The same principals apply, so the answer should be the same regardless of which one you’re talking about. But one of the two people have far more real-world experience with.

I think I would doubt they’re mentally all there if they said hey eat me after I die, but assuming they were then I don’t see a problem with it.
Just to be clear it’s implied in the hypothetical that the person was capable of consenting when he wrote his will saying he consents to being eaten.
