The original anime could stand for a LOT of editing. There are flashbacks that are unnecessary given modern viewing habits, side stories that are cute, but don’t belong in the main arc, and episodes where VERY little happens. That being said, just do the editing. Unless this looks completely different, I don’t understand the point of redoing something that is still in motion. Having two separate versions of the same thing, airing at the same time just sounds confusing for new fans and like it’ll lead to brand dilution.

Most of the Anime is frankly filler. And I’m not only talking about the obvious non-canon filler arcs and endless flashbacks. Some episodes contain minutes of slow or still environment shots that aren‘t in the Manga and manage to adapt as little as 5 pages in over 20 minutes. The show currently sits at well above 1000 episodes for something you could probably be adapted in 300 or less. Which is still A LOT and that‘s the other problem with the show (and manga).

Even if you trim the fat you‘re left with a lot of repetitive themes, namely the straw hats landing on an island where they either unravel a mystery that is told frustratingly non-chronological to keep you guessing or they have to help a royal family (that always comes with a beautiful damsel in distress with varying degrees of agency) to get rid of pesky pirates. They save the princess and move in to the next obstacle. Sometimes it‘s a mix of these two type of stories but it gets seriously repetitive in the second half so far.
