Any server worth their salt makes more than $15/hour after tips. The mean is $17/hour according to the United States Government, and that’s assuming the US government knows about all of their tips - they don’t.
Also, don’t be obtuse. I’m talking about locally owned restaurants. It would be really stupid not to consider the owner of the restaurant as part of the supply chain.

The fact is they do make more than the cook in the back, and they often make more than management.
